What’s for dinner?

My dinner meal plans look a little different than the average person’s these days. As many people know, venison is a staple in our home. Brendan has been hunting and harvesting whitetails, as well as other animals, since he was a teen. I also grew up in a hunting family consuming venison throughout the winter months. Brendan and I have been working to perfect our cooking techniques that produce delicious venison and other wild game meals. We are always willing to try new recipes and utilize all parts of an animal. We try hard to have very little waste from all the deer we have harvested. Most recently Brendan kept the shanks (legs) and I made Osso Bucco. It was fancy and delicious! Which I find very humorous as in many cases the shanks are considered scraps usually left for the dogs or just disposed of when butchering a deer.  We usually don’t save the shanks but you can bet we will be from now on. That dish was divine! 

We also do all of our own meat processing. This includes ground sausages, rope sausages, imitation bacon, hotdogs, bologna, jerky, deli style meats and whatever else sounds fun to try. Our kids LOVE the venison hotdogs. I also love the hotdogs because I can control what we put in them for the kids to eat. The most talked about within our family and friends circle is our imitation bacon. We started making it with wild hog meat but we have also used venison and wild goose mixtures as well. We can’t take all the credit and glory, most of our meat processing success would not be possible without Waltons (Everything but the meat). This is our favorite store to buy spices, rubs, meat processing mixtures, equipment and so much more. I absolutely love the adventure of preparing wild game that brendan has harvested. It definitely keeps things interesting in the kitchen. My freezers are full of venison, wild hog, turkey, goose, duck, trout, walleye, white bass, crappe and there might even be a bag of catfish too. It’s so wonderful to be able to “shop” in my basement instead of having to run to the grocery store all the time. Brendan and the guys recently went on a sandhill crane hunt that was successful. We kept it simple when we prepared that dish, salt/pepper/onion powder and garlic powder, pan seared in some duck fat. Let me tell ya….. That was one of the best meals I have eaten in awhile! It was VERY similar to eating a beef steak yet it was a bird!

I am constantly impressed with my husband’s ability to excel and whatever he sets his mind to. I know hunting has always been a passion of his and I hope it always is. He provides a variety of ways for our family but this is probably my favorite way. Literally putting food on the table. I also am thrilled whenever we get to cook together in the kitchen. It’s the little things in life folks.
